Pepperoni Pan Pizza

Pan pizza, or Chicago-style pizza, eschews a thin, crisp, sparsely topped crust in favor of a thick, tender crust loaded with toppings. The unique crust requires a unique dough, which we achieved by using a liberal amount of oil, a little bit of sugar, and milk instead of water. The oil ensures a crisp exterior and the sugar and milk make the crumb soft and tender.
