Welch's Grape Parfait Pie

Serves 8

For this recipe, use your favorite single-crust pie shell recipe, or Pillsbury’s ready-roll version.

1 envelope unflavored gelatin 
1/3 cup granulated sugar 
1 1/4 cups Welch's grape juice , boiling
2 tablespoons fresh lemon juice 
2 cups vanilla ice cream 
1 (9-inch) pie shell , baked and cooled

1. Combine gelatin and sugar in large bowl. Add boiling grape juice, whisking until gelatin is dissolved. Add lemon juice and ice cream, scoopfuls at a time, whisking until ice cream is melted.

2. Chill until mixture mounds slightly when spooned, about 30 minutes. Pour mixture into pie crust and refrigerate until firm, at least two more hours.
