Spicy Beef and Bean Enchiladas

Leftovers that are completely different from the original recipe hardly seem like leftovers at all. We took a hard look at our Swiss steak recipe to see if we could spice it up a bit. Here’s what we discovered:

Test Kitchen Discoveries

  • Cumin and chili powder added the necessary kick to drown out the Swiss steaks’ original flavor.
  • Sautéing the spices in oil before adding the leftover gravy draws out more flavor.
  • Adding creamy pinto beans allowed us to get a few extra portions out of the leftover steak.
  • Some recipes require heating tortillas in a skillet or oven a few at a time. We find that microwaving the packaged tortillas all at once saves time and works just as well.
