Using baby carrots really cuts down on prep time. All you need to do is open a bag.
Remember to shake the pan a few times while the carrots are roasting. This ensures even browning.
Instead of toasting the walnuts in the same pan with the carrots, we used a dry skillet. Toasting the walnuts separately keeps them away from the moisture of the carrots so they don’t get soggy.
