The idea that pasta sauce can’t be quick and simple is an unfortunate myth. We have disproved it a number of times before, but we thought this time we would add a little spicy kick as well. Here’s what we discovered:

Sautéing the anchovies, garlic, and pepper flakes in olive oil for just 30 seconds blooms their flavors and adds depth to the sauce.
Don’t try to speed things up by using less water to boil your pasta. If cooked in too little water, pasta has a tendency to stick together.
Reserve some of the water when you drain the pasta. This can be used to thin the sauce later.
Top with grated Pecorino Romano or Parmesan cheese.
