Pasta with Spicy Tomato and Olive Sauce

The idea that pasta sauce can’t be quick and simple is an unfortunate myth. We have disproved it a number of times before, but we thought this time we would add a little spicy kick as well. Here’s what we discovered:

Test Kitchen Discoveries

  • Sautéing the anchovies, garlic, and pepper flakes in olive oil for just 30 seconds blooms their flavors and adds depth to the sauce.
  • Don’t try to speed things up by using less water to boil your pasta. If cooked in too little water, pasta has a tendency to stick together.
  • Reserve some of the water when you drain the pasta. This can be used to thin the sauce later.
  • Top with grated Pecorino Romano or Parmesan cheese.
