We love crystallized ginger cookies for the holidays, and incorporating rich maple syrup seemed only natural for this time of year. Here’s what we discovered:

  • Maple syrup and pancake syrup may look similar, but they are worlds apart when it comes to taste. Use only real maple syrup for this recipe.
  • Adding both maple syrup and maple extract added extra of maple flavor to our cookies.
  • Using the underside of a glass to flatten the cookies in the baking pan ensures they will cook through easily and uniformly.
  • The cookies will spread out as they bake, so be sure to leave enough space for them to expand (2 inches or more) without running into each other.
