When shopping for Granny Smith apples, look for ones that are yellowish or light green—these will be riper and better tasting than dark green Grannies.
For easy apple coring, we found that a common melon baller works best.
For cleaner nut chopping, place them in a heavy-duty zipper-lock bag and tap them with a meat-pounding mallet until they are the desired size.
Spray the baking pan with cooking spray and line with aluminum foil, allowing excess to overhang pan edges. Spray foil with cooking spray—once cookies have been baked and cooled, use the foil overhang to easily lift the bars from the pan.
