Test Kitchen Discoveries
Buy chickens that have been cooked on a rotisserie in the store; the cooked chickens in the meat case are usually oversalted and taste artificial.
Rotisserie chicken is usually so well-done that it's best to shred rather than cut it.
If you're putting the chicken in wraps or rollups, avoid doughy wrappings; if using tortillas, get the thinnest tortillas you can find at your local market.
Jarred salsa makes a good start for the filling, but you need to add fresh chiles (we like smoky chipotles) and garlic.
