A cannoli is a classic Italian dessert in which a crisp pastry cylinder is filled with sweetened ricotta flavored with orange, chocolate, pistachios, and a hint of cinnamon. Inspired by a dessert at a local Italian restaurant, we wanted to capture the flavor and texture of a cannoli in a frozen ice cream cake. Here’s what we discovered:
Prepare the cake in a loaf pan. Layer plastic wrap in the pan first--leaving the ends hanging out--to facilitate removal of the cake for serving.
To imitate the cannoli shell, make a crisp crust from crushed almond biscotti. Grind them with butter in a food processor, and then toast them until golden. This mixture is sprinkled on top of the ice cream, and serves as the bottom crust once the ice cream is inverted for serving.
Make the cannoli-flavored ice cream by folding ricotta, marmalade, chocolate chips, pistachios, vanilla, and a little cinnamon into softened ice cream.
