Simple should not mean boring, bland, or just plain bad, but many of the “simple” coffeecakes
we have tried have been just that. We wanted to develop a quick-and-easy coffeecake with a
rich, flavorful crumb and nutty, crisp streusel topping. Here’s what we discovered:
Test Kitchen Discoveries
Use the “quick bread” mixing method: Combine the dry ingredients and wet ingredients
independently and then fold them together. Don’t overmix the batter; blend it until just barely
combined.
Use either buttermilk or yogurt for a tangy, rich-flavored cake
that balances the flavor of the sweet streusel.
Blend baking soda and baking powder for the best rise. When
we used just one or the other, we were disappointed in either the rise (too little) or the flavor
(bitter).
Add lots of cinnamon to the streusel and cake alike for the
richest flavor.
Add chopped, dried apricots and orange zest to the blended
batter.
