While arugula, grapefruit, and feta cheese sounds like an unholy alliance, the flavors perfectly balance one another. When we made this salad in the test kitchen, here’s what we discovered:
Dress the salad with a tart lemon-shallot vinaigrette.
Peel the grapefruit with a knife and trim away the white, bitter-tasting pith before slicing the grapefruit into sections.
Purchase a whole piece of feta and crumble it just before serving. Pre-crumbled feta can be dry and bland tasting.
