Arugula, Grapefruit, and Feta Salad

While arugula, grapefruit, and feta cheese sounds like an unholy alliance, the flavors perfectly balance one another. When we made this salad in the test kitchen, here’s what we discovered:

  • Dress the salad with a tart lemon-shallot vinaigrette.
  • Peel the grapefruit with a knife and trim away the white, bitter-tasting pith before slicing the grapefruit into sections.
  • Purchase a whole piece of feta and crumble it just before serving. Pre-crumbled feta can be dry and bland tasting.
