Balsamic Vinaigrette

With mild balsamic vinegar, we found that just too much garlic could be overpowering; just a touch was sufficient for flavor. Here’s what else we discovered:

  • Blend four parts oil with one part vinegar for a balanced flavor.
  • Use full-flavored, fruity extra-virgin olive oil for the best flavor. There’s no need to spend a fortune on high-end, gourmet oil, but do try to purchase decent quality.
  • Use a jar with a tight-fitting lid and shake the ingredients until they form an emulsion. Leftover vinaigrette can be stored in the jar.
  • Blend minced shallots and a small amount of garlic with oregano into the vinaigrette for a bright, rich flavor.
