Quesadillas are one of those simple snacks that seem too easy to require a recipe. Or are they? What’s the best type of cheese to use, and how do you cook multiple quesadillas at the same time? We wanted to find out how to make perfect quesadillas. Here’s what we discovered:
Combine canned refried beans flavored with fresh cilantro, salsa, spicy Tabasco, and ground cumin.
Use grated, smooth-melting Monterey Jack cheese. To grate the cheese smoothly on a box grater, make sure the cheese is cold and spray the grate with a thin coat of vegetable cooking spray. The spray prevents the cheese from sticking and clogging up the holes.
Bake the quesadillas in a very hot oven (475 degrees) for a crisp-textured tortilla and smoothly melted cheese. Spray the exterior of each quesadilla with vegetable cooking spray to keep the oil to a minimum.
