Tapenade is a potent blend of olives, garlic, herbs and anchovies that is popular in southern France. Check the gourmet section of your local supermarket or specialty store for jars of it.
A zipper-lock plastic bag makes a perfect disposable pastry bag with which you can pipe the filling into the hollowed-out tomatoes. Simply pack the filling into the bag, snip off one corner of the bag, and squeeze the mixture out the opening. The filling can also be stored in the bag for up to one day--just don’t cut the tip until you are ready to fill the tomatoes.
