Test Kitchen Discoveries
Blanch the green beans in salted, boiling water until tender. The salt in the cooking liquid flavors the beans through to the center. It also helps to keep the green beans bright green.
Add quick pickled red onion slices for vibrant color and a bright flavor. A quick dunk in a boiling mixture of red wine vinegar, sugar, and salt mellows the sharpness of the onion slices and softens their crunchy texture.
Add toasted walnuts for a crunchy, slightly bitter accent to the toothsome beans.
Use fresh tarragon for a classic French touch.
