Fancy gourmet stores sell flaky, crisp cheese straws made from puff pastry for a lot more than we think they should cost. And often, by the time you get them home, the straws are stale or have broken into tiny pieces. We thought cheese straws seemed like just the sort of thing we could make at home--for a fraction of the price. Here’s what we discovered:
Test Kitchen Discoveries
Frozen puff pastry, available at almost all grocery stores, works quite well. It should be defrosted until pliable before beginning; otherwise the dough can crack.
Use full-flavored, freshly grated Parmesan cheese for the best flavor. No other cheese we tried tasted nearly as good.
