Once we use frying oil three times in the test kitchen, we dispose of it—but not down the sink where it can clog pipes. Here is our preferred method. One test cook holds open two plastic grocery bags while another carefully pours in the cooled oil.

Just tie the doubled bags shut, and the oil is ready for the garbage.
