It's hard enough to slice a cake into thin, even layers. But if the layers aren't reassembled in their original orientation, the finished cake can look like the Leaning Tower of Pisa.

To head off this problem, the test kitchen marks cakes before slicing them into layers.

1. SCORE: Using a serrated knife, score the cake in a vertical line, from bottom to top.

2. REASSEMBLE

2. REASSEMBLE: After slicing the cake into thin layers, reassemble the cake, making sure that the score marks line up.
