What does a soft or a stiff peak look like? How will I know when I’ve over-whipped my egg whites?

Egg whites are most easily whipped in a very clean metal bowl with a pinch of cream of tartar, which promotes stabilization.

SOFT PEAKS

SOFT PEAKS: Soft peaks will droop slightly downward from the tip of the whisk or beat

STIFF PEAKS

STIFF PEAKS:

Stiff peaks will stand up tall on their own.

OVER-WHIPPED

OVER-WHIPPED:

Over-whipped egg whites will look curdled and separated; if you reach this point, you’ll need to start over with new whites and a clean bowl.
