What is queso fresco and how can I use it?

We love the tangy, creamy counterpoint that soft cheeses provide in many of our salad recipes. In addition to blue cheese and goat cheese, we found that queso fresco was an excellent option. Popular in Mexico, queso fresco (also called queso blanco) is a fresh, mild cheese made from either cow’s or goat’s milk. Although it’s not a great melting cheese, its crumbly-soft texture makes it an excellent option for topping enchiladas or tacos, sprinkling over bean soups, or tossing into a salad. If you can’t find queso fresco, fresh farmer’s cheese or a mild feta is a suitable substitute.
