Innovative Pie Weight

Overview:

Blind-baking with pie weights (metal or ceramic beads that hold down the pastry in the pie plate so that it bakes level) is easy—until you have to remove the ripping hot beads from the shell. Enter this innovative pie weight, a perforated metal disk with an outer ring of silicone flaps that double as heat-resistant grips. We found that it fits neatly into 9- to 11-inch pie shells, both homemade and store-bought, and produces pastry as comparably flat and even as pie weights do. The only difference: It left a slight indentation on the crust bottom—a non-issue once you add a filling. Overall, it’s much easier to use than traditional weights, cleans up in the dishwasher (on the top rack), and stores easily.
