Potato Casseroles

We love potato casseroles and, evidently, you do too. We received hundreds of entries for our potato casserole contest. Our winner, inspired by Italian cuisine, features a crisp exterior and a delicate, soufflé-like interior.

    Mashed Potato and Herbed Cheese Bake

    Boursin cheese spread, which is flavored with garlic and herbs, is the secret ingredient in this recipe. The casserole can be prepared a day in advance, refrigeratred, and then baked, increasing the cooking time by 5 to 10 minutes.
